The sun and stars don't move much relative to us. Rather it is planet Earth that is moving much faster in relationship to them. Our planet rotates on it's axis, from West to East. This transition causes our perspective view of them as moving East to West. We can not see the sun at night because we are facing away from the sun into open space. Similarly the stars don't go away either, they are still there during the day. You just can't see them because the luminosity of the sun and the refractory properties of our atmosphere render such as impossible with our eyes.
