The gastric chief cells of the stomach secrete enzymes for protein breakdown (inactive pepsinogen, and in infancy rennin). Hydrochloric acid activates pepsinogen into the enzyme pepsin, which then aids digestion by breaking the amino acid bonds, a process called proteolysis.

The two functions of HCl are as follows:

  • Hydrochloric acid contributes to protein digestion by supplying H+ which activates pepsinogen. Pepsinogen is secreted by chief cells in the gastric glands of the body. Proteins are reduced to fragments, called peptides, by pepsin so they can eventually be absorbed in the small intestine.
  • Without adequate HCl secretion, larger fragments of proteins enter the small intestine and may compromise the efficiency of digestive processes.
