1. The rancidity can be prevented by adding anti-oxidants to foods containing fats and oils. These antioxidants slow down the oxidation of food and hence protect it from turning rancid.
2.Rancidity can be prevented by packing fats and oil containing food in nitrogen gas.

Answer:

Rancidity can be defined as the partial or complete oxidation or hydrolysis of fats and oils when the food stuff is exposed to the exposure of air, light moisture and bacterial exposure, resulting in unpleasant odor and taste. The two methods to prevent rancidity are:

1. The rancidity can be prevented by the addition of anti-oxidants to food stuffs containing fats and oils. These anti- oxidants slows the down the process of oxidation of fats and oils present in the food hence, prevents it from becoming rancid.

2. The nitrogen gas is added in the packaged food stuff to prevent rancidity.
