in evaporation the soluble impurities (and insoluble impurities sometimes) are mixed but crystallization process separates the soluble and insoluble impurities from the solid
in evaporation the resultant object obtained is in powdery form but in crystallization it is pure crystal
In evaporation, the solution is heated to dryness, so some solids like sugar may get charred but it is not so in process of crystallization hope this helps
