Oxidation is the process of addition of oxygen or removal of hydrogen.
Oxidsing agent is the one which is capable of oxidising others by getting reduced himself.
ZnO+C--->Zn+CO
ZnO is getting reduced to Zn
while C is getting oxidised to CO.

So...ZnO is the oxidising agent.

Oxidised substance is the substance which takes oxygen from the oxidising agent and gets oxidised.
For Example:
CH4(g)+2O2(g)------->CO2(g)+2H2O(g)
So, in this above reaction, CH4 is getting oxidised, and O2 is the oxidising agent.
In the redox reaction, oxidised substance and the oxidising agent react with each other.
