Viscosity = shear stress/shear rate

shear rate and velocity gradient are same.

Unit:

In S.I unit:

Shear stress = Force/area = (Kgm/s^2)/(m^2) = Kg/ms^2

Shear rate = velocity/distance = (m/s)/(m) = 1/s

Viscosity = shear stress/Shear rate = Kg/ms

It also expressed in Pa S, N S/m^2, poiseuille

In Cgs Unit:

Viscosity = Poise, Centipoise.

Dimension:

Kg/ms = (M)(L^-1)(T^-1)

SI unit of Coefficient of viscosity (η) is Pascal-second .
