a bimetallic strip can produce a electric current if the temperature differ in both ends.by measuring the current system can tell about the temperature.

sorry thia is thermocouple.thermostat is like autocut,if u have used a water heater it shut down after bowling of water
this is because of the Metallic strip which bend and stop the power supply at a temperature.
