Saliva is secreted by three pairs of salivary glands. Two pairs are located at the side of the jaw and below the tongue. One pair is located in the palate. Saliva mainly contains an enzyme amylase (ptyalin) which helps in the break down of complex carbohydrates into simple ones (glucose molecules). This is the role of saliva in digestion.

angelmathew: The digestive functions of saliva include moistening food, and helping to create a food bolus, so it can be swallowed easily. Saliva contains the enzyme amylase that breaks some starches down into maltose and dextrin. Thus, digestion of food occurs within the mouth, even before food reaches the stomach.
