Xanthan gum, can increase the viscosity of a liquid significantly.

In foods industry this type of substitutes are used in salad dressings etc.

It helps to prevent oil separation by stabilizing the emulsion, but it not an emulsifier.

It is also used to get desired textures in the process of ice-cream making.

Xanthan gum can be produced from simple sugars using a fermentation process & its name is derived from the bacteria used in the process, Xanthomonas campestris.

It has many industrial uses.

It is used as a common food additive. It act as a theckening agent & stabilizer which prevents ingredients from separating.
