State two advantages and two disadvantages of soaking pineapple pieces in concentrated sugar solution compared to keeping fresh pineapple.

  • Preserved pineapples last longer

Disadvantages:

  • Pineapples are high in sugar.
  • Oxidation damages nutrients during preparation. As a result, the nutrients in the preserved pineapple chunks are depleted.
