Because

1) it vapourizes in vacuum and will never record the true atmosphereic pressure

2)Its density is 1g/cm^3.It will have to rise to a height of 10.5m to balance the atmosphereic pressure

3)It is not easily available in pure form and its transparent surface make it difficult to read

4)It west and sticker the walla of the glass tube an samay there fire introduce errores in reading

HI, HERE IS YOUR ANSWER:

Water is not a suitable as a barometric liquid because of the following reasons:

  • The density of water is low, so nearly 10.4 m of height of water column is needed to balance the normal atmospheric pressure. but it is highly inconvenient to take a tube of height 10.4m for a barometer.
  • the vapour pressure of water is high, so its vapuors in the vacuum space will make the reading inaccurate.
  • water sticks with the glass tube and wets it, so reading becomes inaccurate.

HOPE IT HELPS YOU!!!!
