1)The pure sucrose obtained from the sugarcane and beetroot, when mixed will form a pure substance not a mixture because sucrose obtained from the sugarcane and beetroot is chemically same and represents a same phase.
2) It will be a mixture since when we dissolve surcose crystals and beetroot it will have atoms of surcose and beetroot since for solution there must be atoms of only one kind. eg: In Gold the atoms are all of Gold making it a pure substance
