What is current? - Current is a measure of flow of electrons in a conducting medium caused due to the potential difference (i.e. the voltage) between two points. Side note - for representation, we denote direction of current flow from point of higher potential to lower potential or from +ve terminal to -ve terminal. Whereas, the electrons flow from -ve terminal to +ve terminal.

Thus, if there is no potential difference, there will not be any flow of electrons and hence no current. Thus we see that controlling the potential difference in turn controls the current.

An obvious next question is why do we say that we control current? It is because we regulate the flow of electrons by changing the impedance in the path of electrons under the condition that the potential difference hasn’t changed across the endpoints. And the reason for this is that the supply voltage in our sockets does not change - it is always at 110/220V depending on which country you are. But the appliances that we use like heaters, ovens, bulbs, etc. work at different power settings which can only be achieved by controlling the current through them - which is achieved by controlling their impedance.
