suggest how ascending paper chromatography could be adapted to separate colourless substances such as amino acids​

It already has. The acids are allowed to ascend, the paper is dried, and a developing agent of some kind (like ninhydrin) is used to produce colored lines. Alternately, ultraviolet can be used to reveal fluorescent amino acids.
