●Ans: Rancidity: It is defined as chemical decomposition of oils and fats which in another words is spoiling food materials that difficult for consumption. It can be prevented by following methods:
◆The packing of food materials should be replaced the air with Nitrogen.
◆ The food materials should be placed at very low temperatures.
◆ Addition of antioxidants also prevents rancidity process.
