Answer: Ptylin is the older name for the enzyme salivary amylase secreted in the buccal cavity by parotid, sub-mandibular and sub- lingual glands.
Salivary amylase works on an optimum pH of 6.8 and converts starch into maltose. About 30% digestion of starch occurs in buccal cavity itself due to this enzyme.
