this is because of our saliva

Piece of bread is generally composed of starch molecules. After chewing it for long time, the enzymes in the mouth start attack the starch molecules which is further converted into glucose. It is the glucose which provides sweet taste. Thus, due to the action of enzymes the starch chains are converted into glucose

So, when a piece of bread is chewed long enough, it begins to taste sweet because the amylase breaks down starch to disccharides.Lipase and maltase are absent in saliva.Breakdown of discharides doesn't occur in mouth.
