Take ½ kg flour (atta or maida), add some sugar and mix with warm water. Add a small amount of yeast powder and knead to make a soft dough. What do you observe after two hours? Did you find the dough rising? How does it happen?

When yeast is added in the flour dough ,the dough rises because -

• The flour dough is full of starch content.

• When yeast is added in the dough,the yeast decomposes the starch into sugar molecules.

• During this transformation process of starch to sugar, ethyl alcohol and carbon dioxide are also generated.

• This generated carbon dioxide creates air bubbles in the flour dough and for this reason the flour dough rises from it's initial stage.

Once we mix all the ingredients and keep it aside for a couple of hours we would observe that the dough is rising and has risen by almost its original size.

  • As we add yeast and warm water in the flour, the yeast gets a favorable ambiance and starts its production of buds.
  • As rapidly the buds of yeast are formed they conduct respiration and release carbon dioxide.
  • This carbon dioxide forms bubbles and pushes the flour to get released and hence the size of the dough increases.
