The heat that is required for a change of phase is called as the latent heat.Latent heat causes a change of phase but doesn't cause a change in temperature. Temperature change is caused by sensible heat. The heat required to melt or freeze 1kg of substance at constant temperature and pressure is called as the latent heat of fusion.

The heat required to vaporize or condense 1kg of a substance at constant temperature and pressure is called as the latent heat of vaporization.

The temperature change is caused by sensible heat. Let us consider the phase diagram for a pure substance as shown in the above figure.

Consider first the case of melting. The substance is in the solid region and is absorbing heat at constant pressure. When the temperature reaches the melting point at the corresponding pressure, the substance absorbs latent heat of fusion. This is responsible for the phase change and a change in temperature doesn't occur until all the solid has melted. The temperature starts increasing only after the phase change has been fully accomplished. Since the liquid phase has higher entropy, the phase change is accomplished first.

Now consider the case of boiling. When the substance has started to boil at constant pressure, the temperature remains constant till all the liquid has evaporated since vapour phase has higher entropy. Hence the substance has a tendency to attain the vapour phase. Once the latent heat of vaporization has been fully supplied to convert the entire liquid to vapour, the temperature of the vapour starts increasing which is caused by sensible heat.
