Temperature does not rise during the process of melting and boiling though heat is constantly supplied, because the heat energy provided is actually used for conversion of the matter from its solid state to liquid state, and from liquid state to gaseous state. The heat energy is used to overcome the strong intermolecular forces of attraction. This heat does not raise the temperature of the object, and thus it is called latent heat
