Gentle stirring is continued till the milk gets curdled and then it is set aside to be cooled. When the curdled milk is cooled, it is strained through a seive of muslin. Then the liquid whey is squeezed out and the cheese is pressed under a flat weight. After an hour, it is cut into desirable pieces as it is ready to use.
