Answer:

here is your answer hope it helps ☺️

Explanation:

I was A2A this anonymously and I can't decide if the asker wants to know what a 360lb woman eats, or what a vegetarian eats, or what a single mom who relies on the food shelf in the US eats. So since I fit into a lot of weird categories, I'm glad to answer with a bunch of detail, and I hope you find the info you need!

-------------------------

My worst vice is that I never eat breakfast. I know, this is terrible for me. I know, it makes me obese. But I keep trying, and I just can't do it. Every morning I have two mugs of coffee. And twice a week I make oatmeal with chopped fruit in the slow cooker for the kids, so I might eat some of that. But most days... I skip breakfast. Naughty.

Lunch depends on how hungry I am and what I'm in the mood for.

I might eat just an apple sliced with peanut butter if I'm not too hungry. I might have a pre-packaged bowl of udon or miso soup, a la Annie's. Once or twice a month, when the kids are at school and I can get away with sneaking some meat into my diet (shhh!) I splurge on a tuna sandwich. When I had money, I used to like a tray of sushi for lunch, but that's wayyy out of my price range now. Some days, especially if I'm working and distracted, I skip lunch too.

I am not a daytime snacker, as I don't have a lot of appetite.

For dinner, we have a few options. If I can get it, my favorite dinner is a scoop of Trader Joe's Harvest Grains blend (it's like cous cous and quinoa and beans mixed) with mushrooms and bok choi on top. God, that's good. Good, but expensive. On the cheaper side, I make a really good lentil soup that's just a sauteed onion, a carrot, some garlic and a handful of lentils in vegetable broth with chopped kale and a squirt of lemon juice at the end. The kids like scrambled eggs or simple quesadillas, and if I can get fresh or frozen berries I sometimes make Swedish pancakes, which are like a kind of eggy crepe and have really good protein (plus are really cheap.) We sometimes do bean tacos or, if I need to stretch the budget farther, tin can chili (a can of kidney beans + a can of diced tomatoes + spices.) I make sure we have a vegetable and fruit at every dinner, even if I have to do canned peaches or applesauce or frozen green beans or whatever I can get. The kids usually drink 2% milk at dinner, I drink water.

I stay up late working, usually until about 2am, so I do tend to snack late at night. My big extravagance when I'm working is green or white tea. I go through gallons of the stuff. I have a 24oz mug and I drink at least 2 or 3 mugs worth every night, with a bit of honey and milk. Truthfully, I do eat junk food sometimes late at night too - popcorn and chocolate ice cream being top contenders. However these days I can't really afford either, so they're not in the house, so I don't snack. I just drink my tea.

When I look at the women I have known in my life, in my family, I consider myself blessed in that I think I have a relatively healthy relationship with food. I'm not on a diet. I like eating. I don't binge eat, but I can enjoy food and not stress about it either. I just eat and I like it. No big deal. If you're a woman, you know what I'm talking about - that's HUGE. I hope to be able to pass that on to my daughters.

Edited to add: I wrote about this on my blog, but one of my biggest disappointments in the food shelf is that of the 45 items per two week period our family is allotted, only TWO are fruits and vegetables. Two. That's so tragic. So, we've had to cut way back on fresh produce, which is a travesty, especially with growing kids.
