As stated in other answers, the acceleration is the rate of change of the velocity. So 5 m/s^2 is a change in velocity of 5 m/s every second.

As numerical examples:

If you started from rest, then after one second you would have a velocity of 5 m/s. After an additional second you would have a velocity of 10 m/s, etc.

If you started at 2 m/s, then after one second you would have a velocity of 7 m/s. After an additional second you would have a velocity of 12 m/s.

You don’t have to do whole seconds. If you have just one tenth of a second (0.1 s) then the velocity would increase by 0.5 m/s.
