In my understanding, the entropy of the system (the egg) actually increases.
When we heat the egg, by using burning fuel.. the overall temperature of the system goes up and thereby entropy increases.
What causes the solidification is actually the vaporization of liquids such as water which are present within the egg. Now since they become vapour, they can no longer be considered as part of the system under investigation.
The egg-system continues to gain entropy until a saturation point and then starts to decrease as soon as the heating is removed.
