Metals are good conductors of heat for which the cooking utensils including their bottom are made up of metals or their alloys. whereas wood or rubber (not always plastics, cause they'll melt) are insulators of heat. the heat conduction can't pass through them which saves our hands from getting burnt while holding the handles.
