"I am too old a bird to be caught with chaff" ,the convict says that because he thinks that Bishop is trying to trap him up,he thinks Bishop is acting like a nice person,later he will call the cops or something for him, this line means that he says to Bishop that He is not a child,he understand all the things and he know that Bishop is going to trap him (as he think).
