To understand why the direction in which an object moves is given by the direction of velocity of the object and not by the direction of acceleration, lets assume a case:

An object is is thrown in the sky making an angle θ with the horizontal plane, during the whole course of motion its direction can be specified by the velocity of the object while its acceleration will be constant throughout the motion which will be equals to the value (-g) only because its moving against the gravitational pull of earth irrespective of its direction of movement.
