sucrose is a non-reducing sugar because the carbonyl carbons of both monosaccharides are tied up in glycosidic bonds and not available for oxidation by mild agents like sliver ion or copper (II) ion. Sucrose therefore does not react with Tollens’ reagent unless it has been broken down into glucose and fructose, say by pretreatment with acid.
