   \rm{ =  >  \: v =  \dfrac{u}{ \cos( {60}^{ \circ} ) } }

   \rm{ =  >  \: v =  \dfrac{u}{( \frac{1}{2}  )} }

 \rm{ =  >  \: v = 2u}

So, final answer is:
