The flavour and quality of coffee depends on many factors such as
soil and climate but the greatest deciding factor is the species of the
tree from which the coffee is obtained. There are some forty different
species but three major types are commercially cultivated. Arabica is
the most important in the world trade. Coffee trees need sunshine and
water, so they grow well in hot countries like South America, South
Africa, India and the far East. Coffee trees are very delicate and
picking the beans is a long process.
