A parabola with vertex (3,k)

This is, y = a(x-3)^2 + k

Because the symmety axis of a parabola passes trough its vertex. 

vertex is a point where the lines meet for example the square has 4 corners each corner is called a vertex.

Vertex is also sometimes used to indicate the top or high point of something.
