  • First of all i think it is not cuscus its Couscous

The couscous grains are then prepared by steaming them until they have a light, fluffy consistency. Couscous is closely related to pasta, as durum wheat, ground into semolina flour is the same type of wheat that is most commonly used for making pasta.

Semolina is the hard part of the grain of hard wheat , that resisted the grinding of the relatively primitive medieval millstone.Couscous was traditionally made from the hard part of the durum, the part of the grain that resisted the grinding of the millstone. The semolina is sprinkled with water and rolled with the hands to form small pellets, sprinkled with dry flour to keep them separate, and then sieved.
