I imagine she was trying to save the cow. I don’t think she was actually collecting the milk, I think the calf had died and she was trying to stop the cow from getting mastitis as she dried off. Then maybe one day she wondered if her child could drink the milk and it could and it thrived on it.

From the tone of this question I’m guessing the OP thinks milking is gross. But you have to understand that people who work with animals deal day in day out with higher levels of ick than you can possible imagine. Touching a cow nipple is nothing.
