the increase in temperature of water about boiling point in the pressure cooker is due to change in Pressure.

In pressure cooker, the pressure is very high compared to atmospheric pressure. When pressure increases, the boiling point of water also increases.

So water boils at a temperature higher than its boiling point 100℃
