the iron knife shines better after outlining the sour fruits

Sour fruits like lemons, raw mangoes contain organic acids. These fruits usually contain citric acids in them.

Citric acid is a weak acid. It acts as a chelating agent on trace metals like iron.

When iron comes in contact with this type of acids, they react with them. This gives the iron knife more shine on reaction with those acids.
