Two things come to mind as answer to this questions.

When Shivaji Maharaj declared the idea of Swarajya it was reclamation of entire Hindustan from Mughals no matter how far fetched the idea seemed.

The 27 year war fought with Aurangzeb which involved cross raiding each other's territories where maratha forces raided mughal cities like burhanpur , Surat brought them closer to mughal kingdom , army they realise they can dominate and defeat mughal forces therefore they started doing it. They were perennially poor the levy of chauth on mughal dominions could have brought them never gained riches..

I think these were the two major reason which lead to maratha expansion beyond Deccan..
