During the summer months the sun shines brighter on the northern latitudes. Delhi being North of Mumbai gets more Sun during these months.

Because of strong sun the environment and the air around Delhi {and other Northern states) because warmer and lighter. Once the air is lighter it rises up creating a low pressure area (kind of partial vacuum) which is filled in by the winds from the west ! What is on the west is Thar Desert / Rajasthan which is anyway burning and at least 10 degree higher. This wind from west known as Loo fills the low pressure over the Northern states and is the cause of real hot temperatures in Summer.

Mumbai enjoys Maritime climate being near to sea , and is not impacted by such phenomena. The temperature in coastal cities / areas is regulated because of Exchange of Land Breeze / Sea Breeze.
