When Carl Sagan said it, he meant that we are composed of atoms. And all the atoms in the universe, except hydrogen, were produced by stars.

Hydrogen condensed (under gravitational forces) to form stars dense enough for spontaneous hydrogen fusion. That fusion produces helium in our sun and in other stars. Some stars, formed a long time ago, burned enough hydrogen and helium to produce heavier elements, up to iron, by continuing, spontaneous fusion. Some of those stars exploded, blasting their elements out into space. And those explosions forced further fusion that produced even heavier elements.

Our solar system and our earth and our bodies all evolved recently (in galactic time). They could not have formed until many previous stars had lived, evolved, and died.

We are made of “stuff” produced by stars.
