Raisins are dry fruits which tend to absorb water readily. These grapes lose water when they are subjected to dehydration. When they are placed in water for a considerable amount of time, they absorb the water by endosmosis.

So, the final weight of the raisins that have been placed in water will be the weight of the raisins and the water absorbed, whereas the initial weight will be only the weight of the dried raisins before it is placed in water.

So, the percentage of water will be the difference in between the Final weight of the raisins and the initial weight of the raisins.
