Sodium hydrocarbonate are the baking soda is used to make the crispy pakoda.

Formation
When sodium chloride water carbon dioxide and ammonia is mixed together it forms ammonium chlorid eand sodium hydrocarbonate, thus it forms

NaCl+CO2+H2O+NH3----NH4Cl+NaHCO3

uses.
*When the sodium hydrocarbonate reacted with a mild acid like tartaric acid ,it produces carbon dioxide which makes the cake fluffy and smooth
*These are used as antacids to treat acidity
