Plasmolysis is the phenomenon where cytoplasm shrink in a hypertonic medium. A solution with more solute and low solvent is called hypertonic solution. When a cell is kept in hypertonic solution, solvent(water) moves from higher concentration to lower concentration. As hypertonic solution contain less solvent, water from cell moves out of cell which causes cell to shrink that is plasmolysis.
