the plural of tooth is teeth, why isn't the plural of booth both?​

Basically, because the plural -es was pronounced more strongly then, the speaker anticipates the vowel sound changing from oo to ee at the end and gradually the whole word takes on that last sound— so tooth-eez becomes teeth.
