The process of digestion of food begins in mouth because the saliva in mouth contain ptyalin enzyme which digest the simple starch in to sugar maltose.

When we eat the food the saliva in our mouth get mixed with food which moistens the food .

The salivary gland in our mouth secretes an enzyme which hydrolysed the simple starch in to sugar maltose.

This makes the starch sweet. When we eat bread the starch presents in it get converted in to sugar maltose and we feel sweet when eat.

Hence, the digestion first started in mouth.
