The process is removing the green color of the leaf is called destarching and the green pigment of leaves is called as chlorophyll.  

Even it is removed by bleaching the leaves.  On the whole, in this process, leaves are boiled in water which contains a bit of alcohol after that then the chlorophyll gets extracted.
