The process of adding or removing electrons from an atom is called ionization. What is the word for adding/removing neutrons to/from an atom?

There is no general term, such as ionization. But this can be done by a nuclear reaction. Fairly generally this will seriously disrupt the electronic structure of the atom, due to the large energies involved. So the atom may well also be an ion at the end of the process.

Neutrons are bound in the nuclei of all atoms except ordinary hydrogen.

I would say such processes would fall into the general loosely defined class of “neutron knockout reactions”. That name is probably applicable as long as you are not knocking the nucleus completely to pieces, and only some neutrons, the initial projectile nucleus if there was a projectile nucleus, and a new target nucleus with less neutrons are present in the final state.

It is also possible to knock out neutrons using incident photons, or by electron scattering.
