Saliva helps in digestion of starch

The composition of saliva is : 1. mucous and salt
                                               2. water
                                               3. ptyalin/salivary amylase
when food enters the buccal cavity , The salivary amylase acts on carbohydrates and gives out dextrins and maltose sugars.Complex carbohydrates are converted into simple carbohydrates .
In this way the composition of starch (carbohydrates) starts from the buccal cavity (mouth).
