The smell and taste of food containing oil and fat changes after some time because of rancidity of food .
This occurs due to the oxidation of food when the food particle come in the contact of air and moisture.
Two ways to prevent rancidity of food
1. By keeping the food in air tight container.
2. By keeping the food from direct exposure of sun .
