The trees you refer to are often varieties of spruce (picea) or fir (abies) which tend to grow very straight and tall with a single stem (trunk) from which branches grow at very regular intervals. As the trees get taller new branches form, growing horizontally from the stem. Over time, branches grow longer and the older they are, the longer they grow (as measured from the stem to the branch tip). So it stands to reason that longer branches are lower down and the branches are successively shorter as you move up to the tree’s apex. This is what gives rise to the conical shape.
