They look green because the trees don’t synchronously drop all their leaves at one time so they are always green (evergreen).
Some trees are deciduous, they extract nutrients from the leaves in anticipation of severe conditions such as freezing temperatures which would injure the leaves. Their leaves tend to be large and thin.
Some trees have developed other adaptations to adverse climatic conditions and hold on to their leaves for a two or more years. Their leaves tend to be smaller and not as flexible as deciduous tree leaves.
In tropical or neo-tropical regions leaves are continually being replaced and the forests are green year round.
There are several species of oak that live within a couple of hundred km of me in Southern California. Some keep their leaves for more than one season but others drop their leaves in the fall. It’s easy to detect the ‘black oaks’ in, say, December. as they have no leaves and look ‘black’, but often on the same hillside there may be groups of evergreen oaks that keep their leaves.
