I think they called so because they follow satvik aahar (sattvic diet or satvika food or jain diet or yoga diet).

They follow a strict vegetarian diet and don't include onions, garlic and ginger in their diet.

Jains and most Hindus, especially some Brahmans follow sattvic diet.
